Mojo is a Marinade that consists of citrus, typically oranges, herbs, garlic, olive oil, and spices. If you’ve ever dined at a Cuban Restaurant or maybe visited the land, then you’ll have most likely been exposed to a few Mojo at some point (perhaps you did not even know about it). An exemplary instance of some Mojo Marinade exposure is Yuca Con Mojo (Cassava in garlic/citrus sauce).

It is a home staple for Cubans, but it varies like most of the recipes. For example, some people use Olive oil for their Mojo Marinade while many others will skip it, a few are heavier with the spices and herbs, and others not very much.

There’s space for you to toy around with the flavor and make it your personal preference. I will tell you how I make my Mojo Marinade, but you can adjust your own according to your taste.

Ingredients you’ll need 

  • Sour Orange – Citrus is mainly used to tenderize the meat. In this case, we’ll be using a mix of lime with regular oranges to re-create that sour touch. Onion – I do not go with many onions. I use tiny onion or half part of an onion.
  • Garlic – List most countries worldwide; garlic is essential in food items; you need ahead of garlic cloves.
  • Olive oil – It facilitates to keep all sogginess and crisp during food preparation.
  • Spices or Herbs – Cumin, black pepper, Pink salt, and oregano are our base ingredients and flavors usually linked in Latino foods.

Taste of the Mojo Marinade

The flavor is a punchy citrus flavor; the sour orange instantly comes through. It was paired with the part of herbs of garlic. It is not a hot sauce unless you pick to add heat. It is pungent but surely not overpowering in terms of the use of spices and herbs.

A few people love to include coriander, but there is a big split with half of the eaters like it and the others hating it, so you can add it if you want to. I am indifferent to the flavor, but I left it out just because I did not have any to hand.

Cuban Style Mojo Marinade Black Beans and Rice Recipe 

Create one of the most popular dishes in Cuba for your family tonight – Black beans and rice. This savory recipe is bursting with garlic citrus flavors of Mojo Marinade.

Ingredients you’ll need 

  • 1 Tablespoon Olive Oil
  • 1 cup long-grain rice
  • One medium chopped red bell pepper
  • I medium chopped onion
  • 1/4 cup of water
  • Two cans (15oz each) black beans rinsed and drained
  • 1/4 cup of Mojo Marinade
  • 1/4 cup of chopped Cilantro

Instructions 

  • Step 1 – Cook your rice according to the package direction and keep it warm.
  • Step 2 – Meanwhile, heat oil in a big saucepan on mid-high heat. Add bell pepper and onion, cook, and stir it for five to seven minutes. Now add beans, Mojo Marinade, and water. Bring to boil. Decrease the heat to a low level, and cover and simmer for ten minutes.
  • Step 3 – Remove 1/2 cup bean mixture to a small bowl, and mash it with a fork. Now return mashed beans to saucepan, and stir it until balanced. Sprinkle with Cilantro and serve over cooked rice.
